Israeli officials said some 1,100 prisoners joined the strike on Monday, which they claimed was called to demand better conditions.
Barghouti is now serving five life sentences for having a prominent role in the second Palestinianintifada - a period of uprising against Israel between 2000 and 2005 that saw the deaths of 3,000 Palestinians and 1,000 Israelis.
The hunger strikes were organised on Monday by notable inmate Marwan Barghouti, who has been touted as a potential president of Palestine in the future. According to Palestinian authorities and the advocacy group Addameer, some 500 of them are held under administrative detention which means they are jailed without charge or trial for a period of six months, which can be extended.
A spokesperson for Israel's Foreign Ministry said in a statement Monday that the prisoners were not political prisoners, but "convicted murderers and terrorists".
The media committee said the strikers aim at restoring many of their rights that were taken away by the occupation prisons administration, which they had achieved through many past strikes.

Barghouti was arrested in 2002 during the second Palestinian uprising and convicted on multiple counts of murder.
The protest leader, Marwan Barghouti, who has been given four life terms for allegedly masterminding anti-Israeli attacks, was placed in solitary confinement following the initiation of the strike.
Palestinians consider those held in Israeli jails as national heroes.
